This rye has the aroma of allspice, orange peel, anise, oak, char and caramel. It also has a sweet flavor with hints of caramel and vanilla, followed by rye-spice and mint. On the palate it’s powerfully spicy, with cocoa, cardamom and cured leather flavors. The finish is wonderfully lengthy, with baking spices, vanilla and hints of citrus. At our farmhouse distillery in rural Vermont, we push boundaries in each step of the whiskey-making process. We believe in high Rye mash bills and big, bold flavors. A core range of well-aged whiskeys are perfected in exceptional finishing barrels, sourced from the finest cooperages around the world, includingright here, in our own backyard. Surrounded by nature’s bounty, we distill genuine, farm-to-glass whiskey. We harvest our own crops each year, seed experimental grains, and we’ve perfected a custom toast/char profile for our local, sustainably harvested Vermont Estate Oak barrels.
